Hokkaido University CoSTEP will hold the 141st Science Cafe Sapporo, "Eggy Economics - Everyone's Thoughts on the Dinner Table," on June 22nd.

 

Eggs are an essential food item on our dinner tables. Let's imagine how the price of eggs is determined. I'm sure you all experienced the egg shock that occurred in Hokkaido two years ago, when the price of eggs skyrocketed and it became difficult to obtain them.

 

This Science Café Sapporo will invite Yoshiharu Shimizuike, an expert in agricultural economics, to talk about the mechanisms behind egg prices. The café will also hold a workshop where participants can discuss animal welfare in livestock farming and how prices are determined. This will give participants a clearer perspective on egg prices and provide an opportunity to think about their own choices. Let's discuss tomorrow's dining table using agricultural economics as a starting point.
